Peanut Butter Balls

One of my son's favorite foods is peanut butter. Since sandwiches can get boring my mom (Nana) suggested making Peanut Butter Balls for him. You can make a couple different variations of them and keep things interesting. 

Ingredients:

1 cup- Smooth or creamy Peanut Butter
1 cup- Powdered Milk
1/2 cup- Honey (warmed in the microwave for 10 seconds)

1-11/2 Cup of your favorite topping: quick oats, sunflower seeds, coconut, raisins, dried fruit, chocolate chips, walnuts, etc.

1 Roll of Wax Paper

If you want to add more protein to the mix you can mix the following:

1 cup- Smooth or creamy Peanut Butter
1/2 cup- Powdered Milk
1/2 cup- Almond Meal
1/2-3/4 cup Honey (warmed in the microwave for 10 seconds)
1-11/2 Cup of your favorite topping: quick oats, sunflower seeds, coconut, raisins, dried fruit, chocolate chips, walnuts, etc.

Directions:

Mix Peanut Butter, Powdered Milk, and warmed Honey in a bowl until smooth. I use my electric mixer.  If your mixture seems dry and is not sticking together well add a little more honey. Use a spoon to scoop out small amounts of the mixture and roll into a ball. Then roll the ball in the topping of your choice. Line a container you can put a lid on with wax paper and place the rolled balls with topping on the wax paper. When all of the mixture is rolled, place the container in the fridge and chill at least 2 hours. You can store the balls in the fridge if you like. 

Kids really enjoy helping you roll the mixture. It can be a great family activity.
